Stuffed Sweet Potatoes!

With the last Winter Farmers’ Market coming up this Saturday, April 7th at Exeter High School, I figured it was the perfect time for one more dinner idea– you can pick up some ingredients at the market this weekend! Stuffed sweet potatoes are an excellent quick and easy meal with a variety of ingredient combinations to stuff it with.

Different meats such as beef, pork, and chicken can be purchased at Brookford Farm and at Kellie Brook Farm, just to name a couple vendors. If you’re vegetarian, you could use quinoa or purchase dry beans at Baer’s Best by Lover’s Brook Farm.

Adding a variety of vegetables and spices enhances the dish considerably. Adding some greens, raw or sautéed, adds fiber and color to the plate. Spinach and other lettuces can be found at Riverside Farmstand, among others. Onions add a pop of flavor, cabbage would add a nice crunch, and cheese would add a lovely creamy texture. Flying Goat Farm sells delicious goat cheeses and even goat milk, yogurt, and meat! Cabbage and other vegetables can be found at White Gate Farm along with a variety of other vendors. Sweet potatoes can be found at Heron Pond Farm and Two Farmers Farm.

To cook the sweet potato, preheat the oven to 400, poke with a fork multiple times around the potato, lightly oil the outside of the potato, and bake for ~30 minutes or until a fork or knife can smoothly go into the potato. Cut the potato in half and stuff with your favorite ingredients and spices of choice, enjoy!
