Microgreens!

I am the microgreen queen!  Only joking, but I do eat them almost every day, sometimes multiple times day. I enjoy adding them to salads, sandwiches, and eggs! The reason I enjoy them so much and eat them so often is because these little guys are so densely packed with nutrients, even more than their mature counterparts. For example, broccoli microgreens have more nutrients than broccoli itself. There are tons of different kinds of microgreens including red cabbage, broccoli, radish, kale, and cilantro. Be sure to check out Andy’s Edible Garden at the next, and last, winter farmers’ market on Saturday, April 7th at Exeter High School. They offer a variety of microgreens and similar items for purchase! In addition to Andy’s Edibles, other vendors frequently carry microgreens including the Herb Farmacy and Stout Oak Farm.

Microgreens contain 40 times more vital nutrients than their mature counterparts and are high in antioxidants. Red cabbage, amaranth, and radish microgreens are high in vitamin C, vitamin K, and vitamin E. Many microgreens are also rich in beta-carotene.

Microgreens are harvested less than 14 days after germination; this is to ensure that they contain all the high nutrients and are at the point of peak freshness. Microgreens last approximately 5-8 days after purchase, but some can last up to two weeks.

It is also possible to grow your own microgreens! All you need is microgreen seeds of your choice, soil, planter, sunlight, and water! It is best to grow them in a shallow (~1 inch) container or planter. Simply spread the seeds evenly over soil and mist the seeds multiple times a day with water to ensure the soil is always moist and place in an area with high sunlight.
