This past week at the Exeter Farmers Market I found some delicious ingredients that I was able to turn into a beautiful salad. I didn’t measure out the proportions but eyeballed the amounts of ingredients depending on which I liked the best. Feel free to take out or add ingredients of your choosing. I also toasted some bread from the market to enjoy on the side.
Ingredients:
- Onion
- Olive Oil
- Mushrooms (whatever type you like)
- Mixed Greens
- Gourmet Microgreens Mix
- Goat Cheese (crumbled)
- Balsamic Dressing
- Cranberries
Directions:

Put a tablespoon of olive oil into a frying pan and turn on to medium heat

Dice onion

Throw onions in frying pan

Chop mushrooms

Combine with onions and cook until onions are golden brown or caramelized

In a salad bowl, combine mixed greens, microgreens, goat cheese, and cranberries

Turn off stove and add onion and mushroom mixture to salad

Drizzle balsamic dressing on top
And voila! You have a salad that even salad haters (like myself) will love.
