Goat Cheese and Carmelized Onion Salad

This past week at the Exeter Farmers Market I found some delicious ingredients that I was able to turn into a beautiful salad. I didn’t measure out the proportions but eyeballed the amounts of ingredients depending on which I liked the best. Feel free to take out or add ingredients of your choosing. I also toasted some bread from the market to enjoy on the side.

Ingredients:

  • Onion
  • Olive Oil
  • Mushrooms (whatever type you like)
  • Mixed Greens
  • Gourmet Microgreens Mix
  • Goat Cheese (crumbled)
  • Balsamic Dressing
  • Cranberries

Directions:

  1. Put a tablespoon of olive oil into a frying pan and turn on to medium heat

  2. Dice onion

  3. Throw onions in frying pan

  4. Chop mushrooms

  5. Combine with onions and cook until onions are golden brown or caramelized

  6. In a salad bowl, combine mixed greens, microgreens, goat cheese, and cranberries

  7. Turn off stove and add onion and mushroom mixture to salad

  8. Drizzle balsamic dressing on top

And voila! You have a salad that even salad haters (like myself) will love.
