Chipotle Sweet Potato Fries

Sweet potatoes are one of my favorite Fall & Winter vegetables to eat. They are versatile and simple to prepare in a number of different ways. Recently, this root vegetable has become more popular, and it seems like you see it everywhere! Sweet potatoes can be a nutritionally-rich, local alternative to traditional potatoes. Did you know that ½ of a large sweet potato has 384% of your daily value of vitamin A, and 14% of your daily value of potassium? That’s more than a banana! Sweet potatoes are also high in vitamins C and B6, along with providing 3 grams of fiber per serving.

Many restaurants offer sweet potato fries as an alternative to regular French fries. Did you know how simple it is to make your own sweet potato fries? Here is one of my go-to weekly recipes:

Chipotle Sweet Potato Fries

  • 3 large sweet potatoes
  • 2 to 3 Tbsp olive oil
  • ¼ tsp salt
  • ½ tsp cracked black pepper
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • ¼ tsp crushed red pepper flakes

Directions:

  1. First, preheat your oven to 425 F.
  2. Next, cut the sweet potatoes into wedges.
  3. Put your sweet potato wedges, along with all of the other ingredients, into a bowl and toss to coat.
  4. Place sweet potatoes on a baking sheet, ensuring that they are nicely spaced out. If they are crowded, they will not crisp up!
  5. Bake for 15 minutes on the bottom rack, then check on them. The side touching the baking sheet should be browned and looking delicious. If not, put them back in the oven, checking every 5 minutes.
  6. If browned to satisfaction, flip the fries over and put them back in the oven for another 10 minutes.
  7. Enjoy!
