Almond Herb Crusted Chicken and Brussels Sprouts

For anyone looking to make a simple and tasty dinner, this recipe is just for you! Last weekend I made this almond herb crusted chicken with a side of roasted Brussel sprouts, and it was DELICIOUS. The texture of the crust was perfect and it is a much better alternative than normal breadcrumbs. I used chives as the herb for this dish, but any herb or combination of herbs would work! A variety of different proteins could also be substituted, such as fish like a haddock or a tilapia 🙂

Ingredients:

  • 2 boneless, skinless chicken breast
  • 1/2 cup almond meal
  • 1/4 cup almond slices
  • 2 eggs
  • 1/2 pound of Brussel sprouts
  • Salt/pepper to taste

Instructions:

  1. Preheat oven to 350
  2. Wash and cut Brussel sprouts into halves
  3. Place Brussel sprouts on baking sheet with olive oil and s&p to taste
  4. Roast for approximately 25-30 minutes or until tender and browned — As the Brussels are roasting, you can start preparing the ingredients for the crust
  5. In three small bowls, put 1/4 cup almond meal in the first bowl, 2 raw eggs scrambled in the second, and in the third combine 1/4 cup almond meal with 1/4 cup crushed almond slices -I crushed the almond slices up in the bag I purchased them in
  6. Add herbs and spices of choice to the almond mixture bowl
  7. Dip the chicken in the plain almond meal, then eggs, then almond herb mixture, making sure to coat all sides with each step
  8. Place chicken breasts on baking sheet, add extra chopped herbs on top
  9. Bake for 15-20 minutes or until thoroughly cooked
