Fried Cauliflower Steaks with Mushroom Gravy

Hello SEL blog, I am back again with recipes this semester and if you’re looking for a hearty vegetable based meal, look no further. These cauliflower steaks are both crispy and filling, and the gravy is great for mashed potatoes too. You can either choose to bake these, fry them in oil, or if you have an air fryer that would work as well (I ended up using an air fryer).  As always, feel free to mix it up with different spices, the gravy would also be good if you added caramelized onions. This recipe makes 4 medium sized cauliflower steaks with enough gravy for those and side dishes if you prefer. I served the cauliflower steaks with mashed potatoes and a salad, it was delicious.

 

Ingredients               Serves: 4

Fried Cauliflower Steaks

  • ½ head of cauliflower
  • 1 cup almond milk
  • ½ cup flour
  • Panko bread crumbs
  • ½ teaspoon of garlic powder
  • ½ teaspoon of paprika
  • Salt and pepper to taste

Mushroom Gravy

  • 1 (8oz.) carton of mushrooms (I used oyster mushrooms)
  • 1/3 cup butter (I used Earth Balance)
  • 1/2 cup vegetable broth
  • 2 Tablespoons of flour
  • 1 drop liquid smoke
  • Salt and pepper to taste

Directions

  1. Place a pot of ½ cup of water with a steam basket on the stove top and cover.
  2. Over medium heat steam the cauliflower until slightly fork tender (about 10 minutes)
  3. Turn the heat off and remove the cauliflower from the pot.
  4. Place the cauliflower on a flat, heat safe surface.
  5. Place parchment paper over the cauliflower.
  6. Using a plate, lightly and carefully press down on the cauliflower until it is flat.
  7. Let the cauliflower cool, you can even refrigerate if you like.
  8. Cut into portions (4 steaks), If they fall apart a little down worry you can reform with the batter and bread crumbs.
  9. Mix the almond milk and flour together until it makes a batter like consistency (at this step you could also add beer to make the batter fluffier).
  10. Pour the bread crumbs and spices on a plate.
  11. Dip a cauliflower steak in the batter until completely covered, then roll through the bread crumbs.
  12. Complete step 11 for the remaining cauliflower steaks.
  13. I used an air fryer on 375°F for 15 minutes. If you are baking you can bake at 375°F for 20 minutes, if frying just fry till browned on both sides.
  14. Place a pan on the stove top over medium heat and melt the butter.
  15. Add the mushrooms and vegetable broth.
  16. Cook until mushrooms are tender.
  17. Carefully add the mushroom mixture to the blender and blend until smooth.
  18. Pour the gravy back in the pan and add the flour.
  19. Mix until well incorporated and then add desired spices and liquid smoke.
  20. Place a cauliflower steak on a plate and cover with gravy, Enjoy!
