Cucumber and Zucchini Salad

In the hot, humid heat we have had the past couple weeks, I have been craving cool and refreshing dishes to make myself, ones that especially can be served cold. I had an abundance cucumbers from my own garden hanging around and I had purchased some zucchini from Hollister Family Farm last week at the Dover Farmers Market, so I decided to throw together a quick and easy cucumber and zucchini salad. It was so delicious and only required a few local ingredients! Below I have written out this yummy salad you’ll have to try next time you’re at home and thinking it’s too hot to cook with the heat!

Cucumber and Zucchini Salad –

  • 1 medium cucumber (or a couple small)
  • 1 medium zucchini
  • ½ a small onion
  • ¼ cup apple cider vinegar
  • 1-2 tablespoon granulated sugar
  • 1 teaspoon himalayan salt (or regular table salt)
  • ½ teaspoon red pepper flakes

Instructions :

Very thinly slice up the cucumber and zucchini and toss into a bowl. Next take the onion and very thinly dice it and add it to the bowl. Then in a separate bowl mix together the apple cider vinegar, granulated sugar, salt, and red pepper flakes to make your dressing. Mix the dressing in with your vegetables and let the salad sit in the fridge for about 30 minutes before eating it so that the dressing can really soak into the vegetables and increase the flavor. Then, enjoy!

This recipe was so delicious and perfect for me to snack on during the hot weather. Cucumbers are very much in season right now! If you are looking for some locally, within the Seacoast region I have gotten cucumbers recently from Mckenzie’s Farm and they had the perfect crunch and flavor. Also pictured, above my yummy salad, are gorgeous sunflowers my mom had purchased from the Saco Farmers Market in Maine. I have seen some locally, at the Dover Farmers Market being sold at Wake Robin farm and they were so beautiful too. One of my favorite parts about the summer months, besides all the fresh vegetables, is the flowers that are in season. There is nothing better than a bouquet of sunflowers to brighten up a kitchen!
