Lilah’s Post: Simple Mexican Salad Bowl

I whipped together this super easy, super quick Mexican style salad bowl for dinner & it was so delicious and satisfying, I had to share! This colorful bowl is perfect for a fast meal when your craving Mexican food, and it is very good for you as well which is always a plus. This meal took me maybe 20 minutes to make and that is why I love it so much. As always feel free to switch up the spices and change them around to your liking, enjoy!

Ingredients:

  • 1 pound ground turkey (available from vendors like Vernon Family Farm)
  • mixed greens (or your favorite variety of greens)
  • 1 can of corn or equivalent frozen/fresh corn kernels
  • 1 can of black beans or 1/2c dried
  • 1/2 a red onion
  • 1/4 an avocado
  • 1/4 cup salsa- used as a dressing
  • 1 tbsp sour cream
  • 1/4 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cajun spice
  • 1/2 tsp cumin

Directions:

  1. On medium-high heat warm a pan with 1 tbsp of oil of your choosing
  2. Cook the ground turkey in the pan for ~10-15 minutes or until there is no pink
  3. Add all the spices to the turkey in the pan
  4. As this is cooking, drain and rinse the caned corn and black beans
  5. Chop the red onion and slice the avocado
  6. Add all ingredients to a bowl & enjoy!
